Watermelon and Feta Salad
Ingredients:
- 4 cups diced watermelon
- 1 cup crumbled feta cheese
- 1 cucumber, thinly sliced
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Place the watermelon, feta cheese and cucumber in a large bowl.
- Add the mint and basil.
- Drizzle with olive oil and lemon juice.
- Mix gently and season with salt and pepper to taste.
- Serve immediately and enjoy this refreshing, light salad.
Andalusian Gazpacho
Ingredients:
- 1 kg ripe tomatoes
- 1 cucumber
- 1 green pepper
- 1 clove of garlic
- 1/4 onion
- 50 g stale bread (optional)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- Salt to taste
- Cold water to taste
Instructions:
- Peel and chop the tomatoes, cucumber, pepper, garlic and onion.
- Blend all the ingredients with the bread (if using) in a food processor or blender until smooth.
- Add the olive oil, vinegar and salt, and mix well.
- If the mixture is too thick, add cold water until the desired consistency is achieved.
- Refrigerate for at least 2 hours before serving well chilled.
Fish Tacos
Ingredients:
- 500 g of white fish fillets (hake, tilapia, etc.)
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Corn tortillas
- Shredded cabbage
- Yoghurt-lime sauce (Greek yoghurt, lime juice, chopped coriander, salt)
Instructions:
- Mix the cumin, paprika, garlic powder, salt and pepper.
- Rub the fish fillets with the spice mixture.
- Heat olive oil in a frying pan and cook the fish until golden brown and cooked through.
- Heat the corn tortillas in another pan.
- Serve the fish on the tortillas, top with shredded cabbage and yoghurt-lime sauce.
Yoghurt and Fruit Bowl
Ingredients:
- 2 cups Greek yoghurt
- 1 cup sliced strawberries
- 1 cup blueberries
- 1 sliced banana
- 1/4 cup granola
- 2 tablespoons honey
- Fresh mint leaves to garnish (optional)
Instructions:
- Spread the Greek yoghurt evenly in a dessert bowl.
- Place the strawberries, blueberries and banana decoratively on top of the yoghurt.
- Sprinkle the granola on top.
- Drizzle with honey to taste.
- Garnish with fresh mint leaves if desired.
- Serve immediately and enjoy this fresh and nutritious bowl.
